Raspberry Sorbet

The temperatures have been soaring here in Southwestern Ontario and cold iced treats are on the menu, especially when they are easy and just plain delicious. You don’t even need an ice cream maker for this unique sorbet.

Tart and robust, bursting with raspberry flavour with a modest whisper of spice and heat to enhance the berries along with the tang from fresh lime juice and white grape fruit juice. Perfect for a cold treat to beat the heat. Everything is just whizzed together in a food processor, transferred to a covered container and frozen until set. An additional benefit is that most of the sweetness comes from the raspberries and it is suitable for vegans too because it is dairy-free.

For an especially interesting elegant hot summer meal, garnish this pear soup with a small scoop of the sorbet. My dinner guests gave this combination rave reviews.
