Baked Blueberry and Peach Pancake

Baked Blueberry and Peach Pancake

One of my favourite things about summer is the abundance of local produce. Call me crazy for even turning on the oven with the soaring temperatures we are experiencing in Southwestern Ontario, but I could not resist the combination of blueberries and peaches that shine in this baked pancake. Fresh local peaches and blueberries are just bursting with juices and flavours and if you can resist the temptation to devour these delights just on their own, do consider combining fresh fruit with the basic kitchen essentials of flour, eggs, dairy and sugar. If nothing else were ever needed in a woman’s diet I shouldn’t complain, but I do have one regret — I only made one of these baked blueberry and peach pancakes when two would have been just as easy (and would have lasted no longer no doubt).

Serve this rather light pancake for brunch or for a light dinner. Details instructions can be found here.

I spent half my morning making these pancakes for my family today. They were a real hit.

For some variation I also tried wild berries and raspberries.
